Lenten Reflection

From The Lenten Pharmacy:

Jesus identified his betrayer as someone seated near him at that table. For those who have taken up the cross, it would be an act of infidelity—a form of betrayal—to stop living a life of ongoing reform after Lent has come to an end. So, if you are tempted to return to your old ways and habits—use the good medicine of the prayer-mantra, “the Lord God helps me.”

Everything Soup

Ingredients
2 pounds ground beef
3 potatoes, diced
1 can tomatoes, diced (include liquid)
1 can corn
1 can kidney beans
1 onion, chopped
2 carrots, sliced
2 stalks of celery, sliced
1 10-ounce can beef broth
1/4 tablespoon rosemary
1/4 tablespoon basil
1/4 tablespoon thyme
salt and pepper, to taste

Preparation
In a large stock pot, sauté celery, onion, and ground beef. Drain excess fat. Add the broth, potatoes, tomatoes, corn, kidney beans, carrots, salt, pepper, rosemary, basil, thyme, and enough water to cover. Cook over medium heat for one hour.

Makes 6 to 8 servings.
