Lenten Reflection
From The Gift of the Cross: Lenten Reflections in the Holy Cross Tradition:
There is a tattoo parlor across the street from our Holy Cross parish in Colorado Springs. One evening before Mass, I noticed a young fellow: on his back, from shoulder blade to shoulder blade and from neck to lumbar, was a beautifully etched Celtic cross. We, like that tattooed young man, mark our bodies with the Sign of the Cross. When it comes to our sins, God has a gracefully shallow memory. His judgment is always mercy.
Lentil Soup
This recipe is easy to make in a slow cooker.
Ingredients
1 package of dried Lentils
1 32-ounce can low salt beef broth or stock
1 32-ounce can low salt chicken broth or stock
fresh or dried parsley
3 ounces cream sherry
pepper to taste
Preparation
Let simmer all day. If necessary, add some water during the last couple of hours.
Note: Additional items that can be added are celery, carrots and potatoes for a heartier soup.
Commentary
This is a good Lenten recipe other than for Fridays and Ash Wednesday, as it does contain both chicken and beef broth. Vegetable broth could be substituted, but it would require additional parsley and other spices based upon your personal taste.
