Lenten Reflection
From The Gift of the Cross: Lenten Reflection in the Holy Cross Tradition:
Isaiah 55:10-11. We were in the fifth reading of the Easter Vigil in Kitete, Tanzania: “As the rain and snow came down from heaven…” With our corrugated roof and no ceiling, the rain was deafening. That downpour, and the growth it would sprout, was a perfect image of what God had done for us that Lent. And that is the hope for all of us every Lent. We hope through our Lenten practices, especially in the daily reading of scripture, that the Lord will pour his Word upon us.
Jesus can enter our lives only if we know and acknowledge deep down that we really need him; otherwise, he could not have come. He looks out always for the chances we offer—when we need strength, healing, or forgiveness. In prayer, let your eyes meet his, and receive the light of strength, healing, and forgiveness.
Chicken Tortilla Soup
Ingredients
3 chicken breasts
2 cups chicken stock
1 medium onion, chopped
3 tablespoons of butter
1 can garbanzo beans, drained
1 can black beans, drained
1 can whole kernel corn, drained
1 can diced tomatoes with green chilies (mild, medium or hot to your taste)
sour cream
avocado, chopped
cheddar cheese, grated
tortilla chips
Preparation
Boil chicken breasts in salted water, then debone and chop chicken into bite-size pieces. Save at least two cups of the remaining stock, or two cups of canned stock, and put them into a new pot.
In a skillet, brown onions in butter. Add browned onions to stock, then add the beans, corn, and tomatoes. Simmer 30 minutes for flavors to mix. Add chicken pieces in the last five minutes of simmering.
Serve in a bowl with a dollop of sour cream, a couple of tablespoons of chopped avocado, a couple of tablespoons of grated cheddar cheese, and three or four tortilla chips.
