Reflection for the Second Sunday of Lent
From Lent: One Day at a Time for Catholic Teens:
Where might you see the Glory of God? Consider your day-to-day existence. The sun rises, and you see God’s creative beauty in the colors cast across the sky. A friend makes you laugh, and the joy shared is a reminder of God’s goodness. You sit down to a delicious meal with your family, and while talking about your day, you’re reminded of God’s deep and abiding compassion.
Day by day throughout Lent, you can see the Lord and experience his goodness if you know where to look. Every sacrifice, every act of charity, every moment of prayer is an opportunity to fully wake up to, and witness, the goodness of the Lord. As we walk through Lent and see who Jesus is, we can then be faithful to him day by day.
Chicken Fajita Soup
Ingredients
2 boneless skinless chicken breasts, grilled, cut up (or 1 1/2 cups cubed cooked chicken)
1 cup frozen corn
1 16-ounce jar salsa (medium)
1 46-ounce can V-8
1 14-ounce can small red beans
1 14-ounce can black beans
1 14-ounce can pinto beans
3 tablespoon chili powder
1 teaspoon cumin
1 teaspoon paprika
1 teaspoon sugar
1 teaspoon salt
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
1/4 teaspoon cayenne pepper
1/2 small onion, chopped fine
tortilla chips
sharp cheddar cheese
Preparation
Combine in slow cooker and cook on low for 3 to 4 hours.
Serve with tortilla chips and garnish with sharp cheddar cheese.
