Lenten Reflection

From Give Up Worry for Lent!:

Are you struggling to carry your cross? I can say with total confidence that the Lord will assist you. He never gives us crosses that are too heavy to carry. We sometimes feel that way because we forget to ask for help. That help may come in the form of grace or it may come from a Simon of Cyrene — a hospital nurse, a priest, a good friend, a person in the supermarket. These helpers come in all shapes and sizes. Look for your Simon. If he’s not here yet, pray for him to arrive. He will be there soon.

Mushroom Leek Soup

Ingredients
4 leeks, chopped
1 medium onion, chopped
2 cups Portobello mushrooms, chopped
1/4 cup butter
1/4 cup flour
3 cups chicken stock
4 tablespoons white wine
2 cups half and half
1/4 teaspoon cayenne pepper
ground white pepper

Preparation
In a saucepan, sauté leeks and onion in butter. Add mushrooms and continue to sauté for five minutes.

Reduce the heat to low and add flour. Allow mixture to thicken for about two minutes, stirring occasionally. Add the chicken stock and white wine. Bring soup to a boil. Reduce heat and simmer for ten minutes. Slowly stir in the half and half, cayenne pepper, and white pepper.

Makes 6 servings.
