Lenten Reflection

From Jesus, Friend of My Soul:

With age and wisdom, it becomes apparent to me that everyone exists with certain character flaws and shortcomings. As much as I would like this reality to be different, there are no unblemished, perfect people, including myself. Knowing this, I understand when others do not always match up to how I hope them to be. While I do not condone or accept the wrong they may have done, my compassion understands how it could happen. I want to go on loving them, just as Jesus did with Peter. He focused on the goodness welling within his headstrong disciple and encouraged the best of Peter to come forth. What a valuable example for all of us.

Chilled Cucumber Soup


Ingredients
3 seedless cucumbers, peeled and chopped
3/4 cup green onion, thinly sliced
1 tablespoon lemon juice
1 teaspoon lemon zest
1 tablespoon dill, chopped
1 1/2 cup vegetable broth
1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper
1/2 cup sour cream

Preparation
Puree all ingredients, except sour cream, in a blender or food processor. Stir in sour cream. Chill well before serving. Makes 4 servings.

I like to add green onion as a garnish.
