Lenten Reflection Day 19

If you have gone through something really big, really life-altering, you may have reached a point where there may be nothing left but prayer. That’s not a bad thing! Prayer is the resin that can fill up those soul ruptures and make us whole again. When we fall to our knees, crushed by sin or depleted of strength, our only view is up. It is only after burning every bridge and exhausting every idea that we reach rock bottom and can gaze up at the cross whole-heartedly, humbly and meekly crying, “Help me, Jesus”.

Chicken Noodle Soup

Here is a fabulous and easy Chicken Noodle Soup recipe.

Ingredients

6 cups chicken broth
1 pound boneless, skinless chicken
1 cup celery, chopped
1 cup onions, chopped
1 cup of baby carrots, halved crosswise
1 large parsnip, peeled and chopped
1 teaspoon minced garlic
1 bay leaf
1/4 teaspoon pepper
2 cups uncooked medium egg noodles
1/4 cups fresh dill, snipped

Preparation

Put broth, chicken, celery, onion, carrots, parsnip, garlic, bay leaf and pepper in a large saucepan. Cover and bring to a boil.

Reduce heat and simmer 25 minutes, or until check is cooked and vegetables are tender. Discard bay leaf. Remove chicken to a plate to cool slightly.

Add noodles to soup; cover and simmer 10 minutes, or until noodles are tender.

Meanwhile, shred chicken with fingers or 2 forks. Add to soup along with the dill.

Per Serving: 197 cal, 21 g protein, 20 g carb, 3 g fiber, 4 g fat (1 g sat fat), 75 mg chol, 669 mg sodium
